About USDA Prime Grade Steak
Here at Rembrandt’s, we serve 14 ounce USDA Prime grade steaks (on Fridays and Saturdays). They are cut by hand in-house, then fire-grilled to perfection. USDA Prime steak is the top 2% of quality beef available in the U.S. It is almost NEVER found in supermarkets. It is usually only reserved for upscale hotels and restaurants. Prime grade meat comes from well-fed, young cattle and has a lot of marbling (the fat dispersed throughout that gives the meat flavor).
We offer USDA Prime ribeye. The ribeye steak is from the rib section, just in front of the strip loin section. This is a muscle that doesn’t do much work (compared to others), so it is one of the most tender cuts of steak. It is high-quality with excellent marbling.

Most franchise steakhouses (such as Logan’s and Texas Roadhouse) serve Choice grade steak, the next level down from Prime. (Even the other steakhouses here in Madison serve it… no names mentioned!) A Choice steak is still good, but in general, it will be less tender and juicy than a Prime one. It’s a little bit courser and has less marbling (remember, that’s the flavor!).
